Understanding this cultivar palette is key to why the Fuding and Zhenghe zones became the benchmarks, and why 贡眉, according to the standard, cannot be made from anything else.
What “华茶号” Means
The numbers 华茶1号, 华茶2号, 华茶3号, and 华茶5号 are codes for nationally certified tea cultivars of China. All four, important for white tea, belong to the small arborescent habitus (小乔木) and the large-bud, abundantly downy type, commonly referred to as “Big White” — 大白茶 (dàbái chá). It is the dense silvery down of the bud (茶毫, cháháo) and the high amino acid content that make these bushes ideal for 白毫银针 and 白牡丹, where the bud, not the mature leaf, is prized.
Here it is important to immediately establish a terminological fork. In colloquial practice, “大白茶” is the pairing of two Fuding cultivars: 华茶1号 (福鼎大白) and 华茶2号 (福鼎大毫). However, 贡眉 according to the standard is a separate story: its raw material is exclusively the population type 群体种, that is, 菜茶.
华茶1号 — 福鼎大白茶 (Fúdǐng dàbái chá)
The primary cultivar for all white tea. Originating from 福鼎 (Fuding) in northern Fujian, it belongs to the small arborescent type with a medium leaf, which evolved into the “Big White.” It is distinguished by an abundance of 茶毫 and a rich theanine profile, giving the infusion softness and sweetness.
The historical role of 福鼎大白 is exceptional: right up until the 1950s, it was effectively the only “大白” in production, meaning all high-grade white tea with a large downy bud relied on it alone. The cultivar’s application is maximally broad — it goes into 白毫银针, 白牡丹, and 寿眉, covering the entire line of Fuding white tea.
华茶2号 — 福鼎大毫茶 (Fúdǐng dàháo chá)
The second Fuding “Big White,” introduced into production at the end of the 1950s. In habitus, it is a small arborescent plant, but with a large leaf (大叶). Two practical traits distinguish it from its “elder brother”: it is high-yielding and tolerates dense planting well, and its buds are very large.
This is precisely why 福鼎大毫 largely expanded the raw material base of white tea after the 1950s: where 福鼎大白 provided a refined bud, 大毫 added mass and productivity. Its application is the same — 银针/牡丹/寿眉, and in practice, it is these two cultivars together that are implied when one speaks of “大白茶.”
华茶3号 — 福安大白茶 (Fú’ān dàbái chá)
A cultivar from 福安 (Fu’an), a small arborescent plant with a large leaf. Its distinctive feature is versatility: 福安大白 is used not only for white tea but also for black and green tea. Regarding its source, it works in both belts, meaning it is applied in different production zones and categories, which makes it a “workhorse” with broad technological compatibility.
For white tea, this means that 福安大白 is not a highly specialized but rather a flexible cultivar; in the context of cultivar passports, it stands alongside the Fuding “Big Whites,” but its role is wider than a single category.
华茶5号 — 政和大白茶 (Zhènghé dàbái chá)
The primary cultivar of the 政和 (Zhenghe) zone — the second historical center of white tea in Fujian. This is a small arborescent plant with a large leaf, and it is fundamentally important that this cultivar is late-maturing: its bud opens later than those from Fuding, dictating a different harvesting rhythm and a different character for the tea.
The bush is tall, the leaf is fleshy, and the down is abundant. The profile of 政和大白 is described as 醇厚 — dense, “thick,” and full-bodied, in contrast to the lighter and more delicate Fuding style. Its application is standard for a Big White — 银针/牡丹/寿眉, but it is specifically this cultivar that forms the recognizable Zhenghe style with greater body in the infusion.
菜茶 — 群体种 (càichá, qúntǐ zhǒng)
Standing apart is 菜茶 — the local population cultivar (群体种), also known as “土茶” or “小白茶.” Unlike the clonally propagated “Big Whites,” this is not a single clone but a seed-based population: the bushes are heterogeneous, small-leaved (灌木, 小叶), and belong to the shrub habitus. It is widespread across all three historical zones — 福鼎, 政和, and 建阳, with 建阳 (Jianyang) especially preserving it as a living heritage.
The main role of 菜茶 is rigidly fixed: it is the sole raw material for 贡眉. According to the standard, 贡眉 is made only from 群体种, that is, from 菜茶 — and this is its difference from 寿眉, which is produced from large-bud cultivars. 菜茶 has low productivity, which is precisely what makes authentic 贡眉 a relatively rare and cultivar-defined product, not just a “lower grade.”
How to Distinguish Them in Practice
The cultivar logic of white tea is structured along several simple axes.

Bud size and down. All four “华茶号” yield a large, densely downy bud; 福鼎大毫 has the largest buds, 福鼎大白 is the benchmark of fineness and theanine profile. In 菜茶, both the bud and the leaf are small — this immediately reveals the population cultivar.

Zone and style. Fuding cultivars (华茶1/2号) give a lighter, more aromatic profile with an abundance of 毫; the Zhenghe 华茶5号 is more 醇厚, dense, and full-bodied, and is also late-maturing. 福安大白 (华茶3号) is encountered more widely and in other categories as well.

Category of the finished tea. 白毫银针, 白牡丹, and 寿眉 rely on the “Big Whites” (华茶1/2/5号, as well as 福安大白). 贡眉 is exclusively 菜茶. This is not a matter of taste preference but a requirement of the standard.
Historical and Cultural Context
The cultivar history of white tea is, in essence, the history of the transition from 菜茶 to the “Big Whites.” Up until the mid-20th century, 福鼎大白 was the sole large-bud cultivar, and the population 菜茶 constituted a broad, grassroots base. The emergence and spread of 福鼎大毫 at the end of the 1950s, along with the certification of the Fu’an and Zhenghe “Big Whites,” transformed white tea from a local peasant product into a cultivar-standardized category with predictable raw material.
At the same time, 菜茶 was not displaced: it retained a unique niche as the mandatory raw material for 贡眉 and as a living genetic reserve, especially carefully preserved in 建阳. Thus, two logics coexist within a single category — the clonal standardization of the “Big Whites” and the seed-based diversity of the old population cultivar.
